Mandarin Pasta Salad
Dressing:
Whisk the following ingredients together. Cover, and refrigerate until ready to use:
1 tsp finely chopped, peeled ginger root
1 Garlic Clove, pressed
1/3 cup rice vinegar or white wine vinegar
1/4 cup orange juice
1/4 cup vegetable oil
1 tsp sesame oil
1 envelope Lipton Recipe Secrets Onion Soup Mix
2 tsp sugar
Salad:
8 oz Bow-tie (farfalle) pasta
2 cups cooked chicken - diced
1/2 a cucumber - scored, and sliced
1/2 cup red bell pepper - diced
1/2 cup red onion - coarsely chopped
1 package (16 oz) fresh baby spinach leaves
1 can (11 oz) Mandarin orange segments, drained
1/2 cup sliced almonds (optional)
Cook bow-tie pasta according to the directions on the package, drain & rinse under cold running water. Place pasta in a large bowl or salad bowl.
When you are ready to serve, combine the spinach, mandarin oranges, chicken, cucumber, bell pepper, onion, and almonds (optional) with the pasta. Pour the dressing over the salad, toss, and serve immediately.
If bringing to a party, I usually add everything together, but hold off on adding the mandarin oranges and the dressing until you are ready to serve.
