Black Bean Burritos

Black Bean Burritos

 

  • 1 15 oz. can black beans, rinsed and drained
  • 10 oz. frozen, fresh or canned corn
  • 2 whole tomatoes, diced
  • 1 medium onion, diced (or 1 diced chili pepper, seeds and membrane removed)
  • 8 oz. hot jack cheese, shredded
  • Flour tortillas, large size for wrapping and folding
  • Sour cream, for garnish
  • Salsa, for garnish


Preheat over to 350 degrees. Mix all of the ingredients (except the sour cream and salsa) in a bowl.

 

Put a small amount of the mixture into the center of each tortilla shell; enough to fill the shell, but not too much that you cannot bring either end of tortilla to the center for a fold.

 

Place tortillas in baking dish, fold-side down. Put any extra bean mixture on top of tortillas.

 

Bake uncovered for 15 minutes.

 

Garnish with sour cream and salsa.
